Hey Hey It's Friday

Well, lots of things going on really. I'm re-evaluating the whole podcast gig. Not giving it up, but just trying to figure out what is going to be the best plan for fitting it into what seems to be an overwhelming schedule. When it comes down to it - life is interfering with my crafting time which makes it difficult to podcast when there is nothing new to talk about!!  To read more, please see my Ravelry post HERE.

In addition, I haven't been feeling the best, so the blog posting has also suffered! Not until I can get myself feeling great, can I do great things,  ya know!

But in the meantime I figured I could at least share some fun photos of the week like I typically would on podcast day.

It was a beautiful day out and we enjoyed playing outside for a bit.  This week is a groggy blur. Not much went on except for the same old day in day out stuff, school, karate, yada yada yada.

Try It Tuesday: Yoga

Well that's an interesting outfit...


If there is one thing that I am NOT and never have been it's flexible. I have certainly noticed a small increase of flexibility as I've been working out, but I'm still about as stiff as a corpse most of the time.

I can barely touch my toes when I'm standing bent down or sitting with legs out front. I have nightmares from high school trying to do these simple activities for that dumb "Presidential Fitness Test" thingy we all had to go through.  Between that and the cursed "rope climb" gym class was definitely not my thing.

So here I am in my mid thirties and ya know what I really want to do? I want to do the splits. Why? I have no clue. Just something I would like to do. I'd also like to do a cartwheel....but I'm about as graceful as a skunk. So we will save that for when I'm 40 okay?

I have no clue where to begin. Sure I'd like to join a class, but I think my schedule and my wallet are a bit tapped for that. I already have karate once to twice a week and enough activities to fill twice as many hours that I have in a day.  So of to the interwebs I will go.  Do you have any good Yoga resources?

I would like just a few 15-20 minute beginner routines to start out with. See if I like it. It'll be something I will try to do on my off days perhaps. Maybe twice a week or so.

Make It Monday: Tuna Avocado Wraps

Happy Monday! I'm actually in quite the funk today. Dreary, rainy day, "lady" problems getting in the way and I witnessed a part of the circle of life that I wasn't really to fond of....

BUT hey, you're hear to see what's been cooking right? This recipe was the first Paleo recipe I tried - and was going to be the first I shared until I made those sweet potatoes. Missed it? You can find it HERE.

This was another fail for the kids - my kids are way too picky - but hubby and I enjoyed it. I'll actually be making it for dinner tonight as well!

Ingredients
  1. 1 can tuna
  2. ½ very ripe avocado
  3. 2 tbsp paleo mayo
  4. ¼ cup green olives
  5. 2 tbsp diced green chiles
  6. 1 scallion
  7. 2 large leaves of green leaf lettuce (or your favorite green!)
  8. This recipe serves two, but is so good you just may eat the whole thing yourself.
Instructions
  1. Cut olives in half and dice scallion.
  2. Mash the avocado until it’s a creamy consistency, and then mix with paleo mayonnaise.
  3. Add in the tuna, olives, scallion, and diced green chiles to the avocado-mayonnaise mixture.
  4. Place one scoop of tuna salad into a large leaf of lettuce, wrap, and enjoy!


AND as usual - I simplified.  First of all I doubled it since it was for the family for dinner. I eliminated the olives and chiles because....yuck...I don't like olives and didn't have nor really care for chilies. And I didn't have a scallion, though that could be good.

So....two cans tuna, one avocado, small quirt of mayo (I just use regular mayo...again I'm easing in to this whole thing). Mash and done. Oh and I garnished with a grape tomato cut in half which gave it an extra little flavor boost when you bite into the tomato. It was quite enjoyable.
